Snack Time

Hey everyone! Today is Snack Snack Time, I gotta be honest I love me some sweets, but when you are trying to take care of your health and what you eat you need to be smart so what I did today was something similar lol, I love chocolate, but I know that can be all sugary so what I do is I buy dark chocolate and mix it with almonds, this is a decadent desert, very delicious and a small piece of this can help you with those sweet cravings. Enjoy!

As you can see in the video this desert is very easy to make and if you have kids they can help too!!

Yummy Paleo Recipes

So I’ve been playing around with my kitchen skills (thanks to pinterest), a friend of mine went Paleo and suggested me a couple of yummy recipes that are super super easy and I thought it would be a great idea to share with all of you what I created. I believe these are great as lunch meals or when you feel the need of having a cheat meal without cheating.

The first dish, is my interpretation of pasta with shrimp, who doesn’t love this combination, so what I did was go to my supermarket and bought spaghetti squash, believe me that after I tried this “pasta substitute” I ain’t looking back, it’s super easy to make and it is so versatile you can prepare it with everything, so for this dish I just put in a pan a dash of Extra Virgin Olive Oil, the shrimp and zucchini,  a little bit of kosher salt and pepper, and that was it. I also added half avocado just because I had some left. It was so yummy that I am literally craving it right now.

201406_03The second dish is our interpretation of rice with veggies, as we cannot eat rice we used cauliflower, I just put the cauliflower in the blender until it looked like rice (hehe), then in a pan I put a little bit of sausage (no oil this time), then I added mushrooms and red bell peppers, last I added the cauliflower. The flavor of this dish is so delicious that I would eat this every day if I could, I believe you can mix and match maybe you can add more veggies or instead of sausage you can add chicken, but that’s what I had on hand.

The 100 and forgetting everything I knew

I am very excited today to start this week by talking about a breakthrough I had last week, It was as if it was there all the time but I was not ready to see or grasp it. The breakthrough was that I am turning 30 this year and I know is just a number so I don’t get overwhelmed by saying I am getting older, but hey I am not getting any younger either. Also, I am getting married soon (finally!! Lol). And still I haven’t been able to achieve that healthy state where I’ve been wanting to be for the longest time.

So I started working out again, this started 2 weeks ago, I’ve been going to the gym doing Zumba, Cycling, Swimming, Abs, and all that you could think of to keep my mind sane and mostly stress free. I have been working out because I feel more alive, which is something that happens when you move your body.

My next step was food (uhh the tamed subject that has haunted me all my existence!!), and I said to myself why does it have to be so hard? Why do I let food be an important part of my life to the point it controls me?, Why nothing that I’ve done works out? Basically because deeply I know that I am kind of weak with food especially bad food. I am in a cycle of eating healthy on weekdays and then the weekends “my cheat day” I go and break every single good habit I could have.

Last week, I knew that definitely I needed to break that cycle once and for all, and I needed to forget about everything I knew about diets and eating healthy, because basically I knew nothing and because nothing has been working out for me. Plus I needed to be open minded because if I don’t open my mind to new things I won’t be able to succeed.

While thinking about this and trying to see what to do a friend introduced me to The 100 from Jorge Cruise, and yes I admit I had to investigate if it worked, people testimonials and all that stuff to be 100% in. So I gotta say it doesn’t sound bad, it actually made sense and I decided to put everything and do it. So today I am in my day one and what better way to document my experiment that in my blog.

So if you are interested stay tuned in the next following weeks I will be updating you in my new lifestyle and what I’ve been feeling about this diet, I am also thinking in recording my experiment to see what happens. But, we shall see.

My Makeup Stash, Pants on Fire and More!!

Hey guys, happy start of the week!! Iiik I cannot believe how time is flying so fast, last thing I know we will be saying Merry Christmas! Anyways, the other day I was doing my makeup and thought hey why not take a pic of my current stash!

Lets be honest these past few days I have not been investing a lot of time doing my makeup, I know it seems like a lot but believe me I have made it to less than 10 minutes. Which is a big challenge for me LOL.

And while I’ve been running up and down I have been also playing with my red pants from Old Navy I just love them, especially with a chambray blouse.

Update, Travel & What’s in My Bag!!

Hey guys so today I am pretty excited, I know once again I should be studying because I have a test on Saturday, but God it’s hard to concentrate. So what’s been going up lately, well a lot of work which has been hectic, but I don’t give up and I keep going to the gym as I committed, every day before going to the office.

Food related well I’ve been trying to be better because let’s be honest I am basically working out pretty hard and I want that effort to be worth it, I just been cutting out a bit of calories per day and been eating more veggies.

And some exciting news I will be going out of town YAY it will be only for a couple of days, but it is quite cool and where am I going??

That is right I will be hitting Houston!! I heard that the weather is hot and humid so let’s see how it goes. Has anyone been there or lives there that can give me a couple of tips?

Anyway I will be preparing my suitcase and makeup, question would you like me to do a what’s in my travel stuff?? Also do you want to see some vlogs??

This looks Fishy

There is nothing like a free afternoon at home, so if you know me I don’t have much cooking skills and truthfully every time I try to cook a new dish I have a hard time, so no wonder I love my little electric oven.

This was a gift from my mom last Christmas and I don’t know how I could live without this little fella in the past. It cooks all my veggies (leaving them crispy), fish, and chicken plus does it fast without any hassle.

This is what I decided to do:

Fish with Veggies

What an original name (NOT), but hey this is easy peasy, I just placed the fish and asparagus’ in a Pyrex with olive oil, salt and pepper.

Placed it in the oven checking continuously for the fish to get cooked and done. I only prepared a side salad with lemon and some fresh strawberries (because I need my dessert).

And it all tasted delicious if you ask me!

My Weekend in Pictures

Good food and great times…that was my past weekend. I must say I am proud of myself because I had the 2 days off this weekend and I think I enjoyed them while being productive. My Saturday started with me getting my buttocks up straight to the gym (662 calories burned yeah baby!). The hubs has been taking a class on Saturday mornings so I have those extra hours.

That same day we ended up having dinner at my parents’ home and I know is not much but I am proud to say that I ate a 1 bun burger, with not so much fries.

Next morning, I took my hub for a late Valentine’s Day breakfast at Village Inn, sorry and here I totally forgot about calorie counting and all that stuff, but I went to the gym afterwards which made me proud I mean gym on a Sunday.



Either way I am very impressed with myself, you can see that I am wearing a denim shirt in the picture which besides being my FAVORITE STAPLE PIECE for this spring, amazingly is a size Medium (YEAHHH) I am no longer Large. This gives me a big push to keep moving forward with my workout routine.

Fun Fun Weekend

So I’ve been kind of running up and down, here and there lately; we have been visiting my parents a lot as well over the weekends; so when we do it this means eating great food, family time, and retail therapy.

So yep that’s what happened again this weekend, I had a three day off from work, on Friday we did a little bit of shopping (expect another haul soon), but we also went to a store I loved. I’ve never been there, but my sister said it was the coolest store, so I couldn’t say no. The store is called World’s Market (I don’t know if there are branches of this one) but they sell a lot of stuff (A LOT), mainly furniture and home decorating, but they also have food and snacks from all over the world, kitchen tools, wine, and their tea selection was humongous. They also had jewelry and scarves (oh my weak spot!)

I was amazed when we were there. I did not get anything (maybe next time ^_^), but I took these amazing pictures:





On Saturday we watched scary movies and I had to prepare the famous Pigs in a Blanket; for being the first time I did these, they were so nummy nummy.


So yep on Sunday we were back at home, well rested and relaxed to start another work-week (which means I didn’t do anything else but start decorating our house with Christmas Lights). I know I have to start working on getting my winter clothes out of their boxes, (which was a task I’ve been holding for 2 weeks now), but hey I will have to subsist another week with cardigans and scarves jejej…

P.S. I know is just November, but let me tell you that we did have a hard time installing those lights (we are perfectionists and we wanted them to look good and don’t fly away with the weather), that is why I am starting early, at least they will last some time jeje..
